Nr. 2: Strawberry-Vanilla Jam



Ingredients:
– 3 small jars
– 1kg strawberries, washed and quartered
– 500g sugar
– 1 scraped vanilla pod
– juice of half a lemon


Preparation:
1. Put Strawberries, sugar, vanilla and lemon juice in a saucepan and bring slowly to boil, stirring continuously.
2. When the sugar is melted, keep boiling for about 10-15 minutes.
3. Place a small amount of jam onto a small plate and put it into the fridge for 3 minutes. The jam should get sticky. If not: keep boiling and try again later on.
4. Carefully ladle the hot jam in your prepared jars, fill to the top, put the lids on and then turn upside-down to form a vacuum seal. Don’t do this step when you use Weck-jars! Just close them carefully.
